Artisan café bakery GAIL’s was reaching a turning point. Its growth strategy of increasing availability across London neighbourhoods was running out of road. To deliver the next phase of growth, GAIL’s needed to look beyond its core customer and beyond the M25, expanding its café and retail footprint.
